Example: Tom turkeys dress at approximately 75% of live weight. If a customer wanted at least
250 lbs of dressed turkey, how many turkeys should be slaughtered when the birds
average 28.25 pounds / bird?
_________________# of birds
Solution:
# Required
———————— = # Birds
(Dress % ) (Avg Wt)
Convert % to decimal values
250#
——————— = 11.799 Birds 12 birds
(0.75 ) (28.25)
Pricing dressed birds. Live birds have a price per pound and when that price is multiplied by 12
the weight of the birds a total cost is derived. The price per pound dressed can be determined by
dividing the price live weight by the evisceration percentage.
Example: Turkeys cost 42¢ per pound live. What would be the per pound price when the dressing
percent is 75%?
Solution:
$/W Live
———— = $/lb. dressed
dress %
$0.42
——— = $/lb. dressed
75%
Convert % to decimal values
$0.42
——— = $/lb. dressed
0.75
$0.56 = $/lb. dressed
