Production. In the United States, dairy farmers are paid per 100 pounds of milk; 1 cwt = 100
lb. Dairy cows are milked two or three times a day. In dairies where the cows are milked 3 times
per day the total daily milk production per cow is higher than should they be milked twice a day.
Milk yield will rise during the first months after calving, followed by a long period of continuous
decline. Lactation is ideally 305 days followed by a two-month dry period prior to the next calving.
As this chapter deals with the metric system of calculations you will explore dairy production in
those metric terms by weight and volume.
Example A: The Holstein dairy breed produces on average 9,900 kilograms of milk annually with
an average butterfat content of 3.7%. (a) What is the daily average milk produced
during a 305 day lactation and (b) how many kilograms of butterfat are produced
daily?
